The perfect loaf
The perfect loaf for me is a white loaf not to airy and not too doughy. As much salt as you can get in without affecting the yeast. Double zero flour and fresh yeast. Maybe a little milk added to the water to soften up the crust.

Well this is my favourite today ask me tomorrow and you'll get a different answer. That is the thing about baking bread, once you get a feel for the recipes you can adapt and add twists to your hearts content and never really find a bread that is perfect enough for you not to want to try anything else. Experimentation and variety is the name of the game. A perfect loaf is a quest not a reality.
